Cooking can be as fun as we can make it. Together we can do anything. Chef Joe Fish takes you on a journey to prepare some inspired garlic flavored dishes that we all can only dream about. We’ll start with Garlic confit that will be spread upon crostini as an appetizer. We will continue with a dish of Garlic shrimp served with Garlicky green beans almondine with caramelized onions. We then finish up with (some say) a difficult dish of Garlic risotto the way you like it. Chef Joe will assist in demonstrating all of these dishes as the students prepare the same dishes. Not a demonstration, but a celebration as each participant will have their own place to prepare each of these delectable items and then enjoy them while they are nice and hot. We cannot wait to cook with you!
We will slowly oil poach garlic cloves and toast some crostini in the same pan and reserve them to the side. Then add herbs and red pepper flakes to the poached garlic cloves and mix together with grated parmesan cheese, making a mash to spread on the reserved crostini. Garlic heaven on a cracker.
This can be prepared in one dish at the same time. A touch of planning to have the caramelized onions prepared ahead of time and the green beans blanched and all will work out. Plump juicy shrimp are sauteed at the same time as we reheat the blanched green beans. Gently, we will move the beans around in the pan, adding the almonds to lightly toast and then add our garlic and flip the shrimp. Lastly, we will add our prepared caramelized onions to the beans and almonds and as the aroma of garlic fills the air, a squeeze of lemon finishes our dish.
A lot of stirring is involved with this dish. The proof is in the (pudding) finished dish. We will hydrate some arborio rice with stock, chopped thyme, white wine, parmesan cheese, butter and a great deal of chopped garlic. When we finish this dish lots of smiles will happen.
