Cooking with the Chef at Chateau Faire Le Pont
Come on down to the winery and learn to prepare Spanish style appetizers with Chef Joe Fish.
Chef Joe will assist in demonstrating each of these items as the students prepare the same
dishes. Not a demonstration, but a celebration as each participant will have their own mise en
place to prepare each of these delectable items and then enjoy them while they are nice and
hot.

Arepas de Choclo
Sweet Corn Cakes with Cheese
Individual masarepa flour corn cakes blended with ground sweet corn, milk and Spanish queso
fresco. This classic street walking appetizer can be found throughout the Caribbean Islands

Bacon Wrapped Chorizo Stuffed Dates
Flavorful Spanish Chorizo sausage is stuffed into pitted dried dates and wrapped in bacon then
baked to perfection in the oven. A version of this classic tapas is featured on the menus of all
tapas restaurants

Authentic Albondigas
Tapas Style Spanish Meatballs
A unique take on the meatball. This Spanish version of meatballs is composed of beef and pork
mince, garlic, onion, parsley, diced bread and prepared in an unusually different way. They are
baked in the oven and then served with cayenne smoked paprika tomato sauce

Gambas Al Ajillo Catalonia
Shrimp Prepared with Garlic and Butter
Petite shrimp are flash seared in a generous amount of garlic and butter then finished with
lemon juice, red pepper flakes, a dash of paprika and some chopped parsley. You will find the
classic tapas on every tapas restaurant menu
